Observed various foods in upright freezer in cook's line and small cooler by pizza ovens not properly labeled. All previously cooked, then cooled foods must be labeled with item, date and time cooling began; all foods out of original containers must be labeled with date and item. Please label. 15  Observed the following non-food contact surfaces to be improper: 1. frost build up on upright freezer in cook's line, 2. torn gasket on small prep cooler - left door by pizza ovens, 3. cracked lid and loose gasket on inside lid of chest freezer by ice machine, 4. raw plywood shelves above chest freezer in middle room.
